Fermentation for 35 days at max. 20 °C with indigenous yeasts on stainless steel. 3 days of daily punching down - every 3 hours - for the “pied de cube”. 3 months on stainless steel tank and 2 monnths in bottle

Straw yellow not too full, clear and shiny

Description of wine:

This white wine is made from the rare autochthonous capolongo grape. It has a good freshness and complexity of aromas with pleasant balsamic and fragrant notes.

Alcohol Grade: 12 % Vol
