Primitivo means Apulia, because it represents it in all its aspects. By combining the old traditions of this noble vine with a highly advanced technology, Spiavento has focused on this wine, thanks to the results obtained before. Primitivo is one of the best Italian products both in Italy and in the rest of the world. Its taste captures both the most experienced palates and the occasional drinkers , making it one of the most commonly drunk wines. Primitivo in northern Puglia compared to that in southern Salento is characterized by a more elegant and refined taste, softer tannic structure, and higher acidity. It exhibits notes of fresh dark fruits such as cherries and plums, delicate aromas with hints of spices like black pepper and cinnamon.
Leaf Characteristics: The Primitivo grape variety has medium-sized, pentagon-shaped, pentagon-lobed leaves.
Cluster Characteristics: The Primitivo grape variety has compact, medium-sized, cylindrical-conical clusters with 1-2 wings.
Berry Characteristics: The Primitivo grape variety has medium-sized, spherical-shaped berries with a highly pruinose skin and a blue-black color.

GASTRONOMIC PAIRINGS: First courses in red sauce, such as Apulian orecchiette (small oval pasta) with tomato sauce. Ideal with large textured meats, game (wild boar, hare and poultry) and hard cheeses, such as the typical caciocavallo podolico (stretched-curd cheese) of the Gargano peninsula.
