The vineyards extend for about 40 hectares on medium-textured soils with a prevalence of sand and silt that derive from the sandstone rocks of the Chianti boulder. Among the cultivated varieties there are Sangiovese, Merlot, Cabernet Sauvignon, Montepulciano, Pinot Noir, Chardonnay, Trebbiano and Malvasia di Montegonzi. 
The conversion to organic took place in 2003,

The fermentation vessels are in stainless steel or in terracotta amphorae while the ageing takes place in french oak barriques and tonneaux or in 20 HL barrels. Thanks to a 50 kw photovoltaic system, we internally produce all the energy necessary for our needs.

Picking: grapes are hand picked and carried in 20 kg-cases
Pressing: soft pressing with immediate pumping of the juice to the vats, 2 days at low temperature before introducing selected yeasts
Fermentation: in temperature-controlled stainless steel vats for about 25-30
days. Fermentation temperature: 28°/30° C
Malolactic fermentation: complete, in barriques Ageing: in french barriques, 1/4 new 3⁄4 second and third passage, for about 24 months. Bottle ageing: 6 months

TASTING NOTES: Color: dark inky ruby red. Bouquet: complex, sinuous, embracing, gives an intense bouquet of ripe black cherry, dried red flowers, sweet oriental spices. It closes with balsamic sensations and liquorice. Taste: fullness of elegant tannins in a soft balance, warm intense and fruity in the closing
