Balanced, soft and velvety, Cabernet Sauvignon ÔMINA ROMANA is produced with the same care as the great Bordeaux. The fermentation and subsequent aging in oak barrels give depth and complexity to the wine, which best expresses the influence of the volcanic soils and the unique climate of the production area.
Harvest: during the last week in September and the first week in October
Vinification: in stainless steel tank and in Foeder (oak fermentation vat)
Refinement: in French barriques for about 24 months, and in stainless steel tank for 6 months afterwards
Maturation: in bottles for about 12 months
COLOR: deep garnet with black hue
AROMATICS: intense and elegant, gracefully aged bouquet, black currant, dark cherries, fig, cloves, cigar box, ethereal undergrowth, wood ashes, graphite
PALATE: fine structured tannins with delicate grip in the finish, powerful body, perfect balance between fruit and acidity, persistent and lingering aftertaste
