Grape harvest: Hand-picking and mechanical harvesting.
Usually mid-September
Refinement: Must from the soft-crushed grapes is cooled
and allowed to settle before racking and
inoculation with cultured yeasts.
Fermentation is carried out at a controlled
temperature of 16-18°C.
Wine colour: Straw yellow hue
Description of wine: Subtly appealing fragrances over a dry,
bitter almond-edged palate.
Alcohol Grade:
To match with: Cold cuts, cheeses, herb risottos,
boiled poultry and white meats.
Serving Temperature 8-10 C
